Mango Black Bean salad
This is one of my favorite salads I like to make with grill nights or to bring to a barbecue. You can add a variety of elements to make it your own very easily. Try it tonight.
Ingredients:
4 Mangos-ripe but firm (cut into bite-sized cubes)
1 red bell pepper(cut into small pieces) 1/4 cup
1 can black beans 15 oz (rinse and drain)
1/2 cup of cilantro microgreens
2 tbsp red onion chopped (you can use more if you like)
1 tbsp chopped jalapeno
substitute for jalapeno - 2 tbsp chopped empress nasturtium
Ingredients for dressing:
1 tbsp lime juice
2 tbsp orange juice
1/8 tsp cumin
1 tsp honey
dash of salt
1/4 cup grapeseed oil or avocado oil(optional ingredient)
In a small bowl mix all the ingredients. In a separate bowl mix the dressing, then drizzle over the salad. Refrigerate until ready to serve then mix and serve. You can serve in a bowl and guests can scoop some onto their plate, or you can serve on a lettuce leaf ( like butter lettuce is a good variety)
